Hi, I’m back after a long hiatus! I feel like lately I’ve been starting my posts with this. Summer is in full swing for me and I have been busy for the whole month of July and now somehow it’s August. I had a pretty tough week, saying goodbye to my sister, brother in law and niece. They had been here for the whole month of July and we had too much fun and ate too much good food. It’s funny, my sister hasn’t lived in Victoria for years now and I sort of get used to it. We FaceTime once a week usually and text all day, every day and we just get on with it. But every time she comes home, we get back into the swing of things and I get so used to having her here I forget she has to go back. Now that she has a little girl, my niece, it’s even harder saying goodbye! My mum and I drove them to Vancouver on Sunday and we hatched a plan to all meet in London this Christmas. So knowing that I’ll see them again in less than 5 months makes the missing them all that much easier. I can’t wait to be back in Dublin and London over the holidays, definitely my favourite cities to be in at Christmas time!
Now to talk about the most fun and unique bakery I have ever been to! While we were in Toronto, which honestly feels like years ago but was only in May, Dave and I visited the Bake Shoppe. My friend Dani had told me I had to visit it before we left and so I did just that. Dave and I arrived as it was opening, at noon on a Thursday. I have never been to a bakery that opens at noon! And I had never been to a bakery like this before. They had the most fun and imaginative baking I have ever seen. There were homemade pop tarts, Funfetti cookies and even Rice Krispie squares made with Ruffles chips! Dave had to try the Ruffles meets Rice Krispie square treat because he loves salty and sweet combos. I went for the pop tart because I had never had a homemade one before! From that moment I decided I had to make some of my own and this long weekend I am doing just that and I can’t wait! Since blueberries are still in season and so delicious I’ve decided to make a blueberry lemon pop tart. I’ll be sharing it on my social media and on the blog as soon as I can!
I love visiting all sorts of bakeries and cafes whenever I am traveling and even at home. Ever since I started working at Quince Cafe I find it gives me inspiration to try new recipes when I’m there and at home. Plus one day I hope to run my own bakery and I like to see what types of bakeries are out there. This was by far one of my favourites I’ve visited and if you’re in Toronto and have a sweet tooth I would highly recommend stopping in, even if you take a treat to go! They also had ice cream and coffees available plus they do special orders for cakes and other baking!
