The past two summers I have had the privilege of making wedding cakes for my friends. It’s something I never thought I would do until I volunteered to make my best friend’s wedding cake three years ago! My mum helped me a lot through the process, which was a massive help especially since we were living in Ucluelet at the time. This summer I am lucky enough to be making another wedding cake for a good family friend. She has requested both cupcakes and a wedding cake. I will be baking up a storm up until her big day and although it is a lot of work, time and energy, I can’t wait for the experience again! I love making the usuals, blondies, cookies and muffins but nothing excites me more than baking a cake and planning how I will decorate it further.
Last month we decided to do a cake tasting because the bride and groom were unsure of what flavour to choose. I made the classics: chocolate and vanilla but put them together into one double layer cake with vanilla buttercream. I find brides lean towards the simple vanilla icing because it works well with their colour theme of the wedding and white is classic. The bride requested vanilla buttercream and has left it up to me as to how to ice the cake. She has sent me ideas and styles she likes so I will work with those. It will be a three tier cake, the bottom tier will be fake since there will be cupcakes too. I suggested the bride and groom save the top layer for their first anniversary as it is tradition and so the middle cake will be the cake that will be cut for photographs. After the cake tasting the couple decided they liked the mix of chocolate and vanilla and decided a double layer cake of those flavours would be perfect for them! The cupcakes will also be chocolate and vanilla, 55 of each!
Wedding season has definitely snuck up on me once again and I can’t believe our first wedding of the year will be in less than a month. It’s one of Dave’s good friends from school back in Dublin. It’s being held in Charleston, South Carolina and I am so excited to explore a city I know little to nothing about! I have a list started already and although we will only be there for 4 days I plan on doing a lot plus attending a wedding! Then a month later at the end of June we will be at my good family friend’s wedding which will be held here in Victoria and at the Oak Bay Beach Hotel. I’m really looking forward to being guests at two weddings this year and although I am the baker for one of them it will be nice not to be in a wedding party this wedding season. I already have both my wedding looks planned and I can’t wait to wear them and share them on the blog, so stay tuned!
