I got that end of summer cold that I get every year and I am miserable, I would even compare myself to having a man cold. I started my new job today and it was just a lot with a cold and a sleepless night. I never sleep well when I’m feeling anxious about something and I was definitely feeling like that today. I don’t like to talk about how I feel, ever since I was a kid I’ve been like that, don’t know why but I am. It’s something I am always trying to work on but I still struggle with, at 30. So needless to say, today wasn’t the best day. So here I am, instead of talking about my summer cold and new job I’m going to share my new favourite recipe because baking always makes me feel better, (that and shopping and I did some of that this weekend too, stay tuned!)
Every time I go to a nice cafe I have to try their baked goods because well I need to see what they’re up to and compare it to what I’ve been baking. This weekend I went to Hide & Seek on Oak Bay Avenue for a nice Sunday afternoon treat with Dave. It was such a beautiful day we walked along the water before grabbing a coffee and chai. I noticed the loaf on display with just one piece left and it was an Orange Cardamon Cake and I had to have it! Dave had a sandwich cookie with homemade nutella in the middle. Both were delicious but I loved the flavours of the loaf and I definitely plan to recreate it in the next couple weeks. This coffee cake was inspired by two recipes, one my mum loved and one I saw online. I think by combining these two recipes I made an even better coffee cake, one I will definitely be remaking over and over again!
Recipe for honey & sour cream coffee cake:
1/4 cup butter
1/2 cup honey
1 tsp baking soda
1 cup sour cream or yogurt
1 1/2 cups flour
1 1/2 tsp baking powder
1 tbsp vanilla
blueberries (or fruit of your choice)
Recipe for spiced streusel topping:
1/4 cup sugar
1/4 cup brown sugar
1 tsp cinnamon
1/8 tsp cardamon
8 tbsp butter
1 1/3 cups flour
Cream together butter, honey and eggs. Stir in baking soda into sour cream, then add to butter mixture.
Combine flour and baking powder, then stir into liquid ingredients. Add vanilla.
Pour into greased and floured pan (or use parchment paper like I did.)
Combine streusel topping and sprinkle over cake.
Bake at 350 degrees F for 45 minutes.
Let cool then sprinkle with icing sugar and enjoy!
