Even during a heatwave I still bake. I can't stop! I found this cookie recipe on my favourite baking blog: A Cozy Kitchen. I have shared a few of her recipes on here before, but her cookies have to be the best cookie recipes I have ever made and I LOVE cookies. I love summer for all the fruit that comes out, especially strawberries. Nothing reminds me more of summer than strawberry shortcakes with whipping cream, or simply just strawberries and a little bit of cream on top of them. That's why these cookies are the perfect summer cookie. Instead of fresh strawberries, the recipe calls for freeze dried strawberries, which are a little hard to come by. However, after a couple shops, my mum and sister discovered them in two separate shops, so they are out there! Add white chocolate, that sort of reminds you of the cream aspect and voila you have a very delicious cookie!
After moving recently, I am still getting used to the oven in my new place. It is also electric but I feel like I have to keep an eye on whatever I am baking more. I think the humidity in Ucluelet and overall cool, dampness really affected my baking. Whereas down here in Victoria it is so much more dry and hot! I know it's summer and the rain and cool will come, but it is really hard to get used to. These cookies came out beautifully but let's just say since I've been home and baking not many things have come out perfect. For starters my sourdough came out terribly this week. It was my first time making it because Dave makes it each week but it was my first go and it did NOT go well. Stay tuned for that recipe soon, once we have figured out how to make the sourdough work here in Victoria. I also had a little mishap with my mum's birthday cake with the centre not cooking. However, I made it work by putting a little surprise in the centre of the cake and it was actually delicious and really beautiful. I'll share a photo of it soon! So despite always posting beautiful baked goods on my blog and Instagram, it isn't always perfect, there are some mistakes from time to time!
Recipe (A Cozy Kitchen:)
- 3 cups flour
- 1 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup butter
- 1 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 2 tsp vanilla
- 1/2 cup freeze dried strawberries
- 1/2 cup - 1 cup white chocolate chips (or chunks)
- In large bowl, mix together flour, baking powder, baking soda and salt.
- Mix together butter, sugar, eggs and vanilla. (The recipe called for melting the butter and putting these ingredients together then cooling. I did not do this I just mixed everything together.)
- Mix dry and wet ingredients until well combined.
- Fold in the strawberries and white chocolate.
- Cover and place in fridge for minimum 1 hour or overnight (which I did.)
- Bake at 350 degrees for 8-10 minutes.
