It's been a few weeks since I was writing on here. I'm happy to be back and to start sharing some content with you again! The day before I flew out to London was Dave's 28th birthday. I planned a few different celebrations with him so he could really enjoy it. The week before his big day we had friends over for a Buddha Bowl party followed by Carrot Cake, which is Dave's favourite! Then on his special day I took him out to Kuma with some friends for some delicious Japanese comfort food.
But back to the cake, it was absolutely amazing, not to toot my own horn. My mum's best friend had made a Carrot Cake a few weeks before and I had tried a small piece and couldn't believe how amazing it was. It was so moist and not too sweet, the perfect combination with the cream cheese icing on the top. Definitely try it out for yourselves, you will not be dissapointed!
- 2 cups sugar
- 2 cups flour
- 3 cups finely shredded carrots
- 2 tsp baking soda
- 1 1/4 cups vegetable oil
- 4 eggs
- 2 tsp cinnamon
- pinch of salt
- 2 tsp vanilla
- Mix dry ingredients together.
- Blend in oil, add eggs and carrots, then vanilla.
- Blend well and bake in 8 inch layer pans at 350 degrees for 35 minutes.
Cream Cheese Icing Recipe:
- 8 oz cream cheese
- 1/2 cup butter
- 1 lb icing sugar
- 1 tsp vanilla
- 1 tsp orange juice
- Blend cheese and butter, slowly add sugar, vanilla and orange juice.
- Ice cake only after it has completely cooled.
This cake is very moist and delicious. It can easily be halved if you don't want to make it into a layer cake. If you have someone in your life that loves carrot cake, make it for them! If not make it for yourself because it is utterly delicious! Enjoy!
