It was my cousin’s birthday a few weeks ago and I made her this ridiculously, fun pineapple cake! Anna and I lived together for quite a few years before Dave and I started dating and during that time we sort of became inseparable. After my sister moved to London to be with her now hubby, I needed a little sister of sorts to fill the void of missing my sis! So once Anna had enrolled in University in Victoria she made the move down to live in my parents place with me. We had way too much fun over the years and although we haven’t lived together for over 3 years now, we still see each other weekly. Every Wednesday night Anna comes over for dinner, sometimes a yoga class and always a night of tv binge watching, which consists of either Made In Chelsea or Grey’s Anatomy, or sometimes both.
I love baking, but I love making cakes or cupcakes because I love decorating more than baking. I am working on my piping skills, the flowers are still a work in progress but it was so fun to pipe this cake. Yes it took some time but I loved every minute of it. Today, while I was baking at Quince Cafe, someone looked over at me and said it is so relaxing to watch someone bake (that someone being me.) That’s just how I feel when I bake, relaxed. Well that is unless it is a wedding cake and I am stressing over the bride’s first look at her wedding cake. However, in the end those stressful moments are so rewarding. I am working on making business cards with my baking on it so I can take custom orders! So if you know of anyone needing some baking, get them in touch with me!
The cake I baked was my go to, “The Best Chocolate Cake,” recipe. I used it for my past two wedding cakes I have baked and it has been a birthday cake favourite to bake for years with my family and my best friend’s family. It is so simple and forgiving, making it the perfect cake to make for all occasions. It was 6 layers of cake, with cream cheese icing in between each layer and on the outside was a simple vanilla buttercream. I didn’t have any, I was too full from brunch to want cake, but I heard it was great, which is all that matters! I am in full Christmas mode now and I’ll be sharing some new Christmas baking recipes over the next few weeks on my Instagram and hopefully here. This weekend we are visiting my cousin’s family home and I am bringing Cardamon Walnut Cakes and I am so excited to try them!
